Inspired by “Fancy” Bobbie Gentry

Our Fruited Ale is either an Apricot Ale (Fall/Winter) or a Blueberry Ale (Spring/Summer). The base of this beer is more like a Bitter English Ale to help balance out the real fruit puree that is added.  A very, light honey character from the malt can be found lingering with the apricots or blueberries.  Fermenting fruit with grain is not a new craft beer phenomenon, in fact we can trace fruits fermented in centuries old pottery and recipes on papyrus scrolls from the ancient Egyptians in 5,000 B.C.E. Give this Fancy Fruit Ale one chance and it won’t let you down!

“FANCY” Bobbie Gentry

Recorded at Fame Recording Studios, 1969

Gentry wrote and recorded this Southern Gothic song in 1969, and viewed it as her strong statement for the women’s liberation movement. It would be a huge crossover hit from Country to the Pop Billboard charts for her and it would be an even bigger success when Reba McEntire covered the song in 1990 and would reach the Billboard Country’s Top Ten in 1991. The album by the same name gave Bobbie another Grammy nomination for Best Female Contemporary Vocalist; which she won in 1967 for her album ODE TO BILLIE JOE. Born in Chickasaw County, Mississippi, and raised on her grandparents farm, she started playing piano and wrote her first song at the age of seven. Guitar and banjo soon followed and by the age of 13 she was playing in a duo with her mother in California. She would release her first album in 1967, win three Grammys and soar to the top of the charts. “Ode To Billie Joe” is among the list of Rolling Stones 500 Greatest Songs of All Time. Gentry had a short, but very awarded career, she has also influenced many musicians; then at the age of 40 in 1982, she would give her last public appearance and disappear from the public eye and has not been interviewed, performed or seen since.

Our Hop Exploration IPA is a rotating hopped ale that will showcase one hop at a time, or a combination of two hops. The brewers are getting to experiment with specific hops or hop combos for this IPA, which are designated on the can or on the board at the taproom. Green Onions has a very bright mouthfeel and a nice refreshing finish. Each version will use the same base, while still hop forward, the foundation of this beer is more malty with a light sweetness, like toffee or shortbread cookies. The hops are used more for aroma and flavor rather than a stark bitterness. Our house yeast provides a melange of peach gummies and tropical fruit flavors that lays a nice base for a variety of hops. So grab a pint, relax and enjoy a flavorful ale, sure to be your next classic on rotation!

“GREEN ONIONS” Booker T. & The MGs

Recorded at Stax Studios, 1962

Written by Booker T. at the age of 17, although during the studio recording it was largely improvised, was the debut single of Booker T. & The MGs. The album by the same name was the first album to be released on the Stax label. It is often described as one of the most popular instrumental rock and soul songs ever and the Hammond M3 organ that Booker played would become a feature of the Memphis soul sound. The song peaked at #3 on Billboard Hot 100 and made it to #1 on the R&B charts for four weeks. The song was actually recorded as a B-side track, but when played by a Memphis DJ, it brought in such a positive response, they decided to re-release it as an A-side. There are many different stories about how the name came about, the first name was Funky Onions, but at the time was thought it sounded like a cuss word, ha, so funky was changed to green, because Jones said it was the nastiest thing he could think of at the time, green onions. The song leaves behind quite a legacy; it is the only instrumental track on the 500 Greatest Songs Of All Time; in 1999, it was awarded a Grammy Hall of Fame; in 2012, it was added to the National Recording Registry; and in 2018, it was inducted into the Blues Hall of Fame.

Our Session Hazy Pale Ale is a quenchable beer that packs a lot of flavor without a lot of alcohol. Session beers are considered anything under 4-5 % ABV. You have probably noticed that we have quite a few offerings that are around that ABV or even lower, but what makes this beer so special is it clocks in at 2.9% ABV! Proud Meri features Meridian hops to give wonderful citrus qualities, like Meyer lemons and a refreshing hint of mint creating a crushable everyday drinker. We leave this one hazy with a subtle and light malty backbone. A great beer to enjoy on a very hot day, or when you want the flavor of a pale ale without all the alcohol.

“PROUD MARY” Tina Turner

Recorded at Bolic Sounds Studios, 1970

During the 1960s, at the height of the Rock ‘n’ Roll era in Memphis, a deck hand on the Memphis towboat MARY ELIZABETH wrote and composed a song he entitled, ‘Proud Mary.’ The song describes his feelings and experiences, his life and times aboard the ship. The song was published and recorded by John Fogerty of Creedence Clearwater Revival, going on to place #155 on Rolling Stone’s  list of The 500 Greatest Songs of All Time. Ike & Tina Turner released their cover of Creedence Clearwater Revival’s ‘Proud Mary’ as the second single from their 1970 album Workin’ Together. Their rendition differs greatly from the structure of the original, but is also well-known and has become one of Tina Turner’s most recognizable signature songs. The song starts off with a slow, sultry soulful tone in which Tina introduces the song and warns the audience that she and the band are gonna start it off “nice and easy” as “we never do nothing nice and easy” but said they would finish it “nice and rough”. After the lyrics are first sung softly by the Turners, the song is then turned into a funk rock vamp with Tina and the Ikettes delivering gospel-influenced vocals.

“BRING IT ON HOME” Carla Thomas & Otis Redding

Recorded at Stax Studios, 1967

This song originally written by Sam Cooke in 1962, has become a pop standard and covered by numerous artists across genres, and is one of The Rock and Roll Hall of Fame’s 500 Songs That Shaped Rock and Roll. Recorded at Stax Studios for Otis Redding and Carla Thomas’ album, KING & QUEEN, this song uses a call and response format between the two singers. If ever there were Memphis royalty, it would be these two; and as such, Carla is often known as the Queen of Memphis Soul. This album would be the last studio album recorded and released before Otis’ untimely death in ’67 and was recorded in 6 days, earlier in the year with Stax’s house band, Booker T. & the MGs, Issac Hayes, and the Memphis Horns. Although, this song was not one of the three chart topping singles released off of the album, it remains one of the best known songs from the Billboard Top 100 album.

“HOOCHIE COOCHIE MAN” Muddy Waters

Recorded at Chess Records, 1954

Muddy Waters grew up near Clarksdale, Mississippi emulating local blues greats: Son House and Robert Johnson; even though he would later be known as the modern father of Chicago blues, his style of playing was often referred to as reigning from the Delta blues. The song was written by Willie Dixon and first recorded by Waters; it makes references to several hoodoo folk magic elements and the term ‘hoochie choochie’ has been used in many different contexts such as: a provocative dance, a practitioner of hoodoo or an attractive person. A key feature of the song is the use of stop time, or pauses in the music, during the first half of the progression. This musical device is commonly heard in New Orleans jazz, when the instrumentation briefly stops, allowing for a short instrumental solo before resuming. However, Waters’ use of stop time serves to heighten the tension through repetition, followed by a vocal rather than an instrument fill. In 1984, the song was inducted into the Blues Foundation Hall of Fame and in 1988, it was honored a Grammy Hall of Fame Award; it is one of the Rock and Roll Hall of Fame’s 500 Songs That Shaped Rock and Roll; a selection in Rolling Stone’s 500 Greatest Songs of All Time; and in 2004, was selected for preservation in the National Recording Registry.

“SMOKE STACK LIGHTNING” Howlin’ Wolf

Recorded at Chess Records, 1956

“Smoke Stack Lightning” is the perfect distillation of what made Howlin’ Wolf such a powerfully unique artist. Built on a driving, hypnotic, one-chord vamp that subtly accelerates like a steam locomotive, Howlin’ Wolf sings an intense field holler vocal, interspersed with falsetto howls and blasts of raw country blues harmonica. Lyrically the song is a collection of short, clipped verses around the general themes of romantic betrayal and the need to catch a train and leave his mistreatment behind. Undoubtedly reminding him of his own mistreatment as a child and his flight to a better life. A giant of a man who stood over six feet tall and weighed nearly three hundred pounds, Wolf was an amazingly physical performer who would prowl the stage like a caged beast, or crawl about on his hands and knees, or roll on his back like a man overcome with some paroxysm of emotion, all the while howling and moaning his blues as if his life depended on it. Howlin’ Wolf did not just sing the blues; he embodied them. He was a howling wolf!

Our Hazy IPA is our nod to the New England Style of hazy, juicy IPAs that have become a fan favorite. Hopperbolic is generously hopped to bring out the best of our hand selected hop blend. Ripe stone fruit and a medley of citrus emanate from your glass, then you take a sip that is bursting with vibrant flavors of mango, tropical sherbet ice cream and candy like sweetness. It ends with a gentle, rounded bitterness and a lush, pillowy mouthfeel. Stop procrastinating and wrap your phalanges around your glass for a cerebral experience!

“HYPERBOLICSYLLABICSESQUEDALYMISTIC” Issac Hayes

Recorded at Ardent Studios, 1969

This ten minute funk number was on Issac Hayes’ groundbreaking Hot Buttered Soul album. He was best known at the time as a songwriter and arranger for Stax Records. Hot Buttered Soul contained just four tracks and was a complete breakaway from the standard three-minute song format. Hayes explained to Rolling Stone in February 1972: “I felt like what I wanted to say, I couldn’t say it in no two minutes and 30 seconds, because I wanted to speak through the arrangement, I wanted to speak through singing, I wanted to speak through actual monologue. I cut that record with all the freedom in the world and it was a beautiful release for me.” The song title is surprisingly frequently misspelled, even on the album cover, the backup singers are clearly singing “-nistic.” The song’s lyrics, by Hayes and Stax Records Executive Al Bell, poke fun at those who use big words unnecessarily, in this instance when re-wooing a lost love through high-minded compliments. The musicians include the Bar-Kays’ bassist James Alexander and drummer Willie Hall (later of The Blues Brothers Band).

Our Mud Island Ale is a brand new style created by our Master Brewer! This beer was created to be a true Memphis original, and pay homage to the mighty Mississippi River that borders our great city. Where the Wolf River meets the Mississippi a small peninsula was created called Mud Island. Here you will find a museum, parks, amphitheater, and one of the best places to watch the famous Delta sunsets. A dark, hazy IPA inspired ale, that brings forth flavors of rich baker’s chocolate and ripe red berries. The aroma has hints of dank tobacco and floral perfume. Midnight Hour is a magical integration of bitterness from the hops and richness from dark roasted malts. You don’t have to wait until the midnight hour to enjoy this one, but if you wait till the stars come out, you might find your love for this one will begin to shine!

“IN THE MIDNIGHT HOUR” Wilson Pickett

Recorded at Stax Studios, 1965

While still signed to Atlantic Records, Pickett was sent to Memphis to record his next single at Stax Records (which had a distribution deal with Atlantic) using their house band. These sessions produced “In The Midnight Hour,” which became Pickett’s breakout hit. Steve Cropper and Pickett initially wrote this title track at the Lorraine Motel, located near the Stax studios in Memphis. When Pickett and Booker T. and the MG’s first tried to record the song, nobody liked the result, then Jerry Wexler had the idea to change the rhythm so that the teenagers could dance The Jerk, which was a big dance craze at the time. To do this, Wexler had the rhythm section stress the “two” beat, which simulated the dance. Wexler also demonstrated the dance, which the band found amusing. Pickett went on to become a soul music legend and was inducted into the Rock and Roll Hall of Fame in 1991.

Our American Pale Ale, Crosscut, is unfiltered, highly hopped and packs a bigger punch than most pale ales, that normally have a slightly lower ABV. We decided to make this one just a little higher to really give the hops a chance to shine; a bigger, brighter and more flavorful ale that you can find exclusively in our taproom. We highly oat this beer to give a velvety mouthfeel and bring lots of beautiful haze. Super juicy flavors of tangerine, ripe pineapple, and fresh orchard peaches dominate your palette; with an inviting mango and resinous pine aroma, that makes this pale ale an instant classic. A nod to the true American style of highly hopped ales, but with a very balanced bitterness, and an offbeat oated softness. Don’t drag your feet; this one cuts so easily you might just find that one will not be enough!

“CROSSCUT SAW” Albert King

Recorded at Stax Studios, 1966 & 1974

First recorded in 1941, by Mississippi bluesman, Tommy McClennan, as a Delta dirty blues song full of double entendres. It wouldn’t be made popular until Albert King’s version, which he replaced two verses with guitar solos and used a more Afro-Cuban influenced beat, was released in 1966 on the album BORN UNDER A BAD SIGN and reached #34 on the Billboard R&B charts. Booker T. & the MGs were the house band and Al Jackson, Jr. is credited to bringing King in on the project; the group, Bar-Kays, would later re-record a more funkier version with King in 1974 for the album I WANNA GET FUNKY. The song would be inducted into the Blues Foundation Hall of Fame in 2018 as a classic of blues recording with a complicated evolution that King made popular as a blues standard. King himself was known as one of the “Kings of the Blues” alongside B.B. King and Freddie King. In 1983, he was inducted into the Blues Hall of Fame; the Rock and Roll Hall of Fame in 2013; and is ranked #13 on Rolling Stones 100 Greatest Guitarist of All Time.

Our Berliner Weisse is served just like in Berlin, Germany: you have a choice – drink as-is or add a shot of flavored syrup! We offer plenty of choices to make your Berliner your own, but in Berlin you would typically only be given two choices: red (Raspberry) or green (Woodruff). Woodruff comes from the root of a plant and it has a similar flavor to sour candy. Need A Little Sugar has a pleasant green apple and lemon sourness with notes of malty sourdough bread. This beer is quite enjoyable on its own, but also sings with any syrup added to it!

“NEED A LITTLE SUGAR IN MY BOWL” Bessie Smith

Recorded in New York City, 1931

Recorded by Bessie Smith in 1931 for Columbia Records, this dirty blues song is often regarded as one of the best double entendre songs of all time. Although this song is not one of her more popular hits, it perfectly compliments our Berliner, where you might want to add a little sugar (syrup) to your sour beer. Smith, nicknamed the “Empress of the Blues” was a major influence on blues and jazz singers and was the most popular female blues singer of the 1920s and 1930s. Her music stressed independence, fearlessness, and sexual freedom; she became the highest paid black entertainer of her day in the 20s. Her career was first cut short during the Great Depression, which nearly put an end to the recording music industry; she went on to perform in vaudeville and occasionally sang in clubs. She tragically died at the young age of 43 in a car accident in route to Clarksdale, MS from Memphis. In 1984, she was inducted into the National Women’s Hall of Fame; in 2002, her recording of “Downhearted Blues” was selected for the National Recording Registry and is listed as one of the 500 Songs that Shaped Rock and Roll.

Spanish Harlem

Inspired by “Spanish Harlem” Aretha Franklin

Our Amber Lager features Tennessee grown barley and corn brewed like a traditional darker Mexican Style Lager in a nod to our Mexican neighbors, who originally added maize to their brews. Using the corn drys out this beer for a crisp finish. A rich toasted malt brings smooth caramel to the palate. A bouquet of delicate spices, floral aromas and a hint of lime zest from the hops makes this a food friendly beer. A beautiful copper hued lager, Spanish Harlem drinks clean and refreshing!  Fun Fact: Austrian immigrants migrated to the Americas in the 1800s and brought with them their brewing traditions; the Vienna Lager was one of these styles that has actually died off in Austria, but has been kept alive throughout Mexico and passionate craft brewers here in the states. “SPANISH HARLEM” Aretha Franklin

Recorded at Atlantic Recording Studios, 1971

Originally recorded for Aretha’s album YOUNG, GIFTED & BLACK, it was instead released as a single and added to her 1971 ARETHA’S GREATEST HITS album. First released by Ben E. King in 1960, Aretha’s version went to #1 on the Soul chart for three weeks, #2 on the pop chart for two weeks and she received a gold single for one million in sales. Franklin changed the lyrics slightly to modernize it for the civil rights era from a “red rose in Spanish Harlem” to “a rose in Black and Spanish Harlem.” The song was also recorded with star- studded guest musicians Dr. John on keyboard, Bernard Perdie on drums, Chuck Rainey on bass, Donny Hathaway, Cornell Dupree, and her sisters Carolyn and Erma as background singers. The song was included in the Rolling Stones 500 Greatest Songs of All Time.

If you have not been to our taproom before we make craft sodas for the under 21 drinkers or to please our non-drinkers or designated drivers! We have a total of 9 different syrups – 8 all the time flavors and a rotating monthly seasonal – that you can create your own flavor of soda or hard soda. We named our seltzer, Groove, inspired by the grooves on a record. If you haven’t noticed we love our music here at Soul & Spirits and wanted this one to pay tribute not to a particular song, but to all the records spinning those grooves to play out the tunes we love so much! Dark End

Dry Irish Stout

Inspired by “Dark End of the Street” James Carr

Our Dry Irish Stout is a style of beer evolved from the London Porter in Ireland, made most famously at St. James’s Gate in Dublin; it’s poured through a Nitro faucet to give you a thick, creamy, and long lasting head. A black opaque color with a shade of garnet: this beer has a pronounced roasted dark chocolate flavor with a hint of coffee and charred lemons. An ale with a very low earthy hop aroma and dry finish. Dark End is extremely smooth and drinkable due to its low carbonation nitrogen pour. You won’t have to go to the “dark end of the street” to find this beer, just the end of North Main.

“DARK END OF THE STREET” James Carr

Recorded at Royal Studios, 1966

A soul song that only took thirty minutes to write, was written for James Carr, and became his trademark hit, reaching #10 on the R&B chart and crossing over to the Billboard Hot 100 at #77. The song was written during a DJ convention in Memphis during the summer of 1966. The writers, Dan Penn and Chips Moman, describe the song as the best cheating song ever. It was released on his most critically acclaimed and successful album, YOU GOT MY MIND MESSED UP. Over the years since the James Carr release, it has been covered by some very notable artists: Percy Sledge, Aretha Franklin, Joe Tex, Dolly Parton & Porter Wagoner, Ry Cooder, Linda Ronstadt, and Elvis Costello, just to name a few. James Carr was often dubbed the “world’s greatest Soul Singer” but he suffered from bipolar disorder that made performing difficult due to the stress. A resurgence of his career took place in the late 1980s and he recorded two more albums and toured at some festivals in the US and Europe in the 1990s, before his untimely death from lung cancer.

Caledonia

Scottish Heather Ale

Inspired by “Caledonia” Louis Jordan

Our Scottish Ale is poured through a Nitro faucet to give you a thick, creamy and long lasting head. Using a nitrogen faucet mimics the low carbonation and mouthfeel of a pub ale. This beer has a much lower ABV than the typical Scotch Ales. Caledonia reminds one of Scottish shortbread cookies and creamy caramel candies. A nice touch of stone fruit is also prominent in the flavor of this ale. Heather is added which gives this beer a more floral, earthy and black tea like quality, that truly smells like Scotland in a glass. Heather grows wild throughout the country and was often used alongside the malt in brewing traditions of old. The name, Caledonia, was the Latin name given by the Romans to describe the land north of Britannia, which would eventually become Scotland. It is still used as a poetic name for all of Scotland in general. Sláinte!

“CALDONIA” Louis Jordan

Recorded in New York, 1945

Louis Jordan, born in Brinkley, Arkansas, is described by the Rock and Roll Hall of Fame as “The Father of Rhythm & Blues” and “The Grandfather of Rock n’ Roll,” and the Blues Foundation states that he was the precursor to R&B. Caledonia was his fifth number one hit of the 1940s. As one music journalist writes, a song very much rooted in jazz, but with rock and roll beats and energy; that you can actually hear the future of rap and hip hop. Although he wrote the song himself, his wife at the time is credited as the sole songwriter, as he was avoiding an existing publishing agreement. He actually wrote or co-wrote most of his songs, but would not benefit financially from them, for the previous reason. In 2018, Jordan was inducted in the Blues Hall of Fame and awarded a Grammy Lifetime Achievement for leading the way for rock and roll in the 50s. This song is recorded in the Grammy Hall of Fame but credited as “Caledonia Boogie.”

Our Hefeweizen is a true Bavarian wheat ale throwback. When the Bavarians enacted the Beer Purity Law in 1516, only royalty controlled the wheat; thus they were the only ones to have beer brewed with wheat. Hound Dog Hefe is the Queen of wheat beers. Written for Big Mama Thornton, it would be her biggest hit, staying at #1 for seven weeks on the R&B chart and selling almost two million copies. Her version is listed in the 500 Songs That Shaped Rock and Roll by the Rock and Roll Hall of Fame and in 2017 was added to the National Recording Registry for preservation. According to some music researchers, the song is seen as an important beginning in rock and roll, especially using the guitar as the key instrument. The song has been recorded over 250 times, but most famously by Elvis Presley later in 1952. It is one of the biggest selling singles of all time, and his version would also be ranked #19 on Rolling Stone’s 500 Greatest Songs of All Time. Her other biggest hit “Ball and Chain,” which she wrote, would be most famously covered by Janis Joplin in 1968. An often under appreciated songwriter and blues, soul and R&B singer, Big Mama Thornton had a deep powerful voice and strong sense of self in a time when most genres were dominated by males. She was inducted into the Blues Hall of Fame in 1984.
